Our fourth installment of Socca Seasons, is a tribute to the rich, aromatic layers of wild garlic, a delicacy harvested abundantly from France’s lush landscape and used in culinary creations in many versatile ways.
Anna Søgaard, a Copenhagen-born talent, began her culinary odyssey in her home city before venturing to the UK, where she made waves at Erst as sous chef in Manchester. Her ascension to head chef came in 2023, helming the kitchen at Bistro Freddie, a Shoreditch gem under the HAM restaurant group, where she reinterpreted French bistro classics with a modern touch. Known for her inventive approach and dynamic palate, Anna continued to push culinary boundaries, including with the launch of SuppHER, a community-driven supper club series that supports women’s charities, seamlessly blending her passions for food and social advocacy.
Now, Anna teams up with maestro Claude Bosi to celebrate the bold yet subtle essence of wild garlic in a menu that promises to linger on the palate long after the last bite.
