With a deep passion for ethically sourced, seasonal ingredients, Shaun’s cooking style is all about letting the produce shine. At The Quality Chop House, he’s crafted a menu that changes as often as the seasons—sometimes twice daily—ensuring every dish celebrates the ingredients’ natural flavours. Inspired by his time with Peter Weeden at Paternoster Chop House, he values honest, unfussy dishes executed with excellent technique. Everything in his kitchen is made in-house, from cured meats like morcilla and pancetta to inventive staples like beef fat brioche and lamb fat hollandaise. His philosophy is to waste nothing, respect everything. In 2013, he extended this ethos by opening a butcher and food shop next door, where diners can take home whole-carcass cuts, fully embracing his commitment to nose-to-tail cooking.

With Claude by his side, he comes to Socca to showcase the winter truffle and its versatility, crafting dishes with passion, precision, and a deep respect for the treasured ingredient.
