Brad Carter, the visionary behind the Michelin-starred Carter’s of Moseley in Birmingham, has forged a unique path through the culinary world. His journey began as a kitchen porter, sparking his passion for cooking, which took him to Menorca where he honed his skills in whole-animal butchery and ancient preservation techniques. Upon his return to the UK, Brad’s commitment to sustainability and nose-to-tail dining became the foundation of his craft. As a founding member of the Birmingham Slow Food movement, he works tirelessly to preserve local food cultures and traditions.
Now, bringing his expertise and ethos to Socca, Brad curates a menu alongside Claude Bosi filled with rich game delicacies, blending modern sustainability with timeless flavours.
